Kito Kato ("good luck" slang like that), a kind of pun on the back of the well-known snack Kit-Kat.

At the central intersection in Japan, about 4,000,000 people a day pass from top to bottom, from right to left and diagonally. A vibrant, bustling, colorful intersection full of neon signs and this is how your table should feel. Order the "Kashring" dishes for the center of the table, try, share and don't be afraid to taste. In Japan it is customary to eat the fish as a whole with the hydra. We adapted the dish to the local crowd, so the fillet pieces are served on the hydra. Lamb fillet pieces are served in delicate, light and airy tempura accompanied by carrots and shishito in tempura alongside mio-fo sauce and orange vinaigrette sauce

Lettuce and Truffle 湯葉 シラバ

Yuba is the name of the fatty and sweet part of the tofu. Similar to Kaimak (Balkan), Yoba is the thin crust that forms when you cook soy milk. At Kito Kato, the Yuba is prepared on the spot using traditional cooking methods. Using a long chop stick intended for cooking, roll off the resulting crust and place it on the salad containing iceberg, celery, silk lettuce and endive in a truffle puree sauce alongside crispy lotus root, tomato and radish. The whole salad is a play of textures with the Yuba giving it the creaminess.
